Ingredients

  • 2 1/4 cups flour
  • 1 2/3 cups sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup butter or oleo
  • 1 teaspoon grated lemon rind
  • 3/4 cup buttermilk
  • 3 eggs
  • 3/4 cup finely chopped fresh cranberries

Instructions

  1. Mix the dry ingredients together: flour, sugar, baking powder, soda, and salt.
  2. Place butter or oleo in a large bowl and beat at low speed to soften.
  3. Blend in grated lemon rind.
  4. Mix in the dry ingredients; then add buttermilk and mix well.
  5. Beat for 2 minutes at low speed.
  6. Add eggs and beat for 1 minute.
  7. Stir in finely chopped fresh cranberries.
  8. Bake at 350°F for 35 to 45 minutes.
  9. Frost with White Mountain Frosting.
