Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 4 eggs
  • 1 (8 oz) can crushed pineapple
  • 1 1/2 cups oil
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 cup flaked coconut
  • 2 cups grated carrots
  • 1 cup chopped nuts

Instructions

  1. Sift sugar, flour, baking soda, and cinnamon together.
  2. In a separate bowl, mix eggs, crushed pineapple with juice, oil, vanilla, salt, coconut, carrots, and chopped nuts.
  3. Add the dry ingredients to the wet mixture and stir until combined.
  4. Line three 8-inch cake pans with waxed paper and pour the batter evenly into each.
  5. Bake at 350°F (175°C) for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove from oven and allow the cakes to cool on racks for 30 minutes before frosting or serving.
