Ingredients

  • 2 cups instant whole grain brown rice
  • 1 tablespoon oil
  • 3/4 pound flank steak
  • 1 medium onion
  • 3 cloves garlic
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1/2 cup water
  • 2 tablespoons reduced sodium soy sauce
  • 1 teaspoon hot pepper sauce

Instructions

  1. Prepare the rice as directed on the package, omitting margarine and salt.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add the flank steak, sliced onion, and minced garlic to the skillet.
  4. Cook and stir until the meat is browned.
  5. Add the sliced green and red peppers.
  6. Cook and stir until the peppers are tender-crisp.
  7. Stir in water, soy sauce, and hot pepper sauce.
  8. Bring the mixture to a boil.
  9. Remove from heat and stir in lime juice.
  10. Serve the steak and pepper mixture over the cooked rice.
