Ingredients

  • 1 c. Wesson oil
  • 1 1/2 c. brown sugar
  • 4 eggs
  • 3 c. flour
  • 1 c. orange juice
  • 2 tsp. cinnamon
  • 1 tsp. cloves
  • 1 c. seedless raisins
  • 4 1/2 c. mixed fruits
  • 3 c. chopped nuts
  • 1 tsp. baking powder
  • 2 tsp. salt
  • 2 tsp. allspice

Instructions

  1. Heat oven to 275°.
  2. Line two 9×5×3‑inch pans with lightly greased wax paper.
  3. Combine Wesson oil, brown sugar, and eggs in a bowl.
  4. Beat the mixture for 2 minutes.
  5. In a large bowl, combine 1 cup flour with mixed fruits and nuts.
  6. Sift the remaining flour, baking powder, salt, cinnamon, cloves, and allspice into the fruit mixture.
  7. Beat the eggs, sugar, and oil again until well blended.
  8. Add the flour mixture to the oil mixture, alternating with orange juice; mix until combined.
  9. Pour the batter over the fruit mixture and blend well.
  10. Transfer the batter into the prepared pans.
  11. Place a pan of water on the lower rack of the oven to create steam.
  12. Bake for 2½ to 3 hours, or until a toothpick comes out clean.
  13. Cool the cakes on wire racks.
  14. Remove the cakes from the pans and lift the wax paper away.
  15. Wrap the cakes in a damp cloth with brandy, fruit juice, or wine, then cover with foil for storage.
