Famous Wesson Fruit Cake

- Heat oven to 275°.
- Line two 9×5×3‑inch pans with lightly greased wax paper.
- Combine Wesson oil, brown sugar, and eggs in a bowl.
- Beat the mixture for 2 minutes.
- In a large bowl, combine 1 cup flour with mixed fruits and nuts.
- Sift the remaining flour, baking powder, salt, cinnamon, cloves, and allspice into the fruit mixture.
- Beat the eggs, sugar, and oil again until well blended.
- Add the flour mixture to the oil mixture, alternating with orange juice; mix until combined.
- Pour the batter over the fruit mixture and blend well.
- Transfer the batter into the prepared pans.
- Place a pan of water on the lower rack of the oven to create steam.
- Bake for 2½ to 3 hours, or until a toothpick comes out clean.
- Cool the cakes on wire racks.
- Remove the cakes from the pans and lift the wax paper away.
- Wrap the cakes in a damp cloth with brandy, fruit juice, or wine, then cover with foil for storage.
