Ingredients

  • 1 1/2 cups cornmeal
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 eggs
  • 1 cup milk
  • 1 stick oleo (butter)
  • 1 cup cream-style corn
  • 3 or 4 jalapeno peppers, chopped
  • 1 cup grated cheese
  • 1 small chopped onion

Instructions

  1. Sift together all dry ingredients: cornmeal, baking powder, sugar, and salt.
  2. Beat eggs; then add milk and melted butter.
  3. Add corn, chopped jalapeno peppers, grated cheese, and chopped onion to the mixture.
  4. Mix thoroughly until well combined.
  5. Pour the batter into a greased pan.
  6. Bake in a 400°F (200°C) oven for 20 to 25 minutes or until golden brown.
