Ingredients

  • 3 strips bacon
  • 1 1/2 cups yellow cornmeal
  • 1/2 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 1/4 cups milk
  • 3/4 cup shredded sharp cheese
  • 1/2 cup oil
  • 1/2 cup cream-style corn
  • 1 small onion
  • 2 tablespoons green pepper

Instructions

  1. Preheat oven to 350°F.
  2. Oil a 10-inch round pie pan and place in oven to heat.
  3. Cook bacon until crispy, then crumble and set aside.
  4. Chop small onion and green pepper.
  5. In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
  6. In a separate bowl, beat eggs and then add milk, oil, and cream-style corn.
  7. Stir in shredded cheese, chopped onion, green pepper, and crumbled bacon.
  8. Pour batter into the preheated pie pan.
  9. Bake for approximately 35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
