Ingredients

  • 4 qt. thin sliced cucumbers
  • 6 medium peppers, sliced
  • 1/3 c. salt
  • 4 large carrots, sliced thin
  • 3 large onions, sliced
  • 1 head cauliflower
  • 2 tsp. mustard seed
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. celery seed
  • 5 c. sugar

Instructions

  1. Cover the first six ingredients in a large plastic container with ice water. Stir occasionally. When all ice is melted, drain.
  2. Place the drained vegetables in a large pot on the stove.
  3. Mix together the remaining ingredients in a separate bowl.
  4. Bring the sugar mixture to a boil and pour over the vegetable mixture.
  5. Bring the mixture back to a boil and continue simmering as you fill jars.
  6. Put tops on the jars and seal. Makes 6 to 8 pints.
