Ingredients

  • 4 1/3 cups sifted flour
  • 1 1/3 cups sugar
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup oleo
  • 2 eggs
  • 1 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon extract

Instructions

  1. Sift the flour, sugar, baking soda, baking powder, and salt into a bowl.
  2. Work in the oleo (butter) into the dry ingredients as you would for pie crust.
  3. In a small bowl, beat the eggs with a fork until slightly blended.
  4. Add the buttermilk, vanilla extract, and lemon extract to the eggs.
  5. Pour the egg mixture into the flour and oleo mixture and blend well.
  6. The dough will be sticky.
  7. Refrigerate the dough for at least 3 hours or overnight.
  8. Roll out the dough on a floured board.
  9. Flour the rolling pin.
  10. Cut out cookies with a floured cutter.
  11. Sprinkle the cookies with sugar before baking at 400°F for 12 to 15 minutes, depending on thickness.
  12. Use a large cookie cutter for shaping.
  13. Serve the cookies with butter or jam.
