Ingredients

  • 2 boxes frozen broccoli spears
  • 1 can cream of mushroom soup
  • 1 cup mayonnaise
  • 1 cup Monterey Jack cheese
  • 1/2 cup bread crumbs
  • 1 whole chicken
  • 1 can creamy onion soup
  • 1 cup Cheddar cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons melted butter

Instructions

  1. Cook broccoli as directed on the package.
  2. Drain broccoli well.
  3. Spray a 2-quart casserole with nonstick cooking spray.
  4. Cook the whole chicken and cut into pieces.
  5. Grate the Monterey Jack and Cheddar cheeses.
  6. Place the cooked broccoli in the casserole.
  7. Cover the broccoli with the chicken pieces.
  8. Mix together the cream of mushroom soup, mayonnaise, lemon juice, and grated cheeses.
  9. Pour the cheese mixture over the broccoli and chicken.
  10. Sprinkle with buttered bread crumbs.
  11. Bake at 350°F for 25 minutes.
  12. Serve hot with noodles or rice.
