Rice Amandine combines tender green beans and toasted almonds with fragrant brown rice, enhanced by lemon and dill for a tasty, wholesome side suitable for family meals or gatherings.

Ingredients

  • 1 medium onion, chopped
  • 1 1/4 cups chicken broth
  • 1/2 teaspoon garlic powder
  • 2 tablespoons toasted almonds
  • 1 cup frozen cut green beans, thawed
  • 2 teaspoons butter
  • 1 tablespoon lemon juice
  • 1 1/2 cups instant brown rice
  • 1/2 teaspoon dill weed

Instructions

  1. Cook and stir chopped onion in hot butter until tender. Add chicken broth, lemon juice, and garlic powder.
  2. Bring to a boil. Stir in rice. Bring to a heavy boil, then reduce heat to low. Cover and simmer for 5 minutes.
  3. Remove from heat.
  4. Stir in green beans, toasted almonds, and dill.
  5. Cover. Let stand for about 5 minutes, then serve.
