Ingredients

  • 3 beaten eggs
  • 2 cups sugar
  • 2 teaspoons vanilla extract
  • 3 cups unbleached white flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3-4 cups grated zucchini with peel on
  • 1 cup chopped pecans or walnuts
  • 1 cup safflower oil
  • 1 tablespoon cinnamon
  • 1/2 cup raisins
  • 1/2 cup buttermilk, sour cream or plain yogurt

Instructions

  1. Mix all ingredients together in a large bowl.
  2. Pour the batter into two loaf pans that have been sprayed with non-stick spray.
  3. Bake at 350°F (175°C) for 50 to 55 minutes.
  4. Test with a cake tester or knife until no batter clings to it.
