Faye'S Zucchini Bread

Ingredients
- 3 beaten eggs ⓘ
- 2 cups sugar ⓘ
- 2 teaspoons vanilla extract ⓘ
- 3 cups unbleached white flour ⓘ
- 1 teaspoon salt ⓘ
- 1 teaspoon baking soda ⓘ
- 1/2 teaspoon baking powder ⓘ
- 3-4 cups grated zucchini with peel on ⓘ
- 1 cup chopped pecans or walnuts ⓘ
- 1 cup safflower oil ⓘ
- 1 tablespoon cinnamon ⓘ
- 1/2 cup raisins ⓘ
- 1/2 cup buttermilk, sour cream or plain yogurt ⓘ
Instructions
- Mix all ingredients together in a large bowl.
- Pour the batter into two loaf pans that have been sprayed with non-stick spray.
- Bake at 350°F (175°C) for 50 to 55 minutes.
