Ingredients

  • 9-inch pie shell, partially baked
  • 6 oz. Swiss cheese, shredded
  • 4 1/2 oz. can shrimp, drained and chopped
  • 3 eggs
  • 1 1/2 cups light cream
  • 1 tablespoon chopped chives
  • 3/4 teaspoon salt
  • 1/2 teaspoon dry mustard
  • dash of nutmeg
  • 1/4 cup Parmesan cheese

Instructions

  1. Sprinkle Swiss cheese and chopped shrimp over the bottom of the partially baked pie shell.
  2. In a bowl, beat eggs with light cream, chopped chives, salt, dry mustard, and a dash of nutmeg.
  3. Pour the egg mixture over the cheese and shrimp in the pie shell.
  4. Sprinkle Parmesan cheese on top.
  5. Bake at 375°F for 30 to 35 minutes until set and golden.
  6. Let stand for 20 minutes before serving, then cut into thick slices.
  7. Serve warm or chilled.
