A comforting casserole combining tuna, peas, rice, and cheese in a creamy mushroom or celery soup base, perfect for quick weeknight dinners and satisfying family meals.

Ingredients

  • 1 1/3 cups water
  • 1 can mushroom or celery soup (cream)
  • 1/4 cup finely chopped onion
  • 1/4 teaspoon salt
  • a dash of pepper
  • 1 1/3 cups instant rice
  • 1 cup cooked peas
  • 1 (7 oz.) can tuna, drained and flaked
  • 1/2 cup shredded cheese

Instructions

  1. Combine water, soup, onion, salt, and pepper in a pan.
  2. Bring the mixture to a slow boil.
  3. Pour one-third of the soup mixture into a greased 1 1/2-quart casserole dish.
  4. Layer one-third of the rice, peas, and tuna over the soup mixture.
  5. Repeat the layering process two more times, gently stirring after each layer.
  6. Sprinkle shredded cheese over the top.
  7. Cover and bake at 375°F for 10 minutes.
  8. Stir gently, cover again, and bake for an additional 10 to 15 minutes.
