Ingredients

  • 2 c. water
  • 2 Tbsp. oil
  • 2 eggs
  • 2 (16.6 oz.) pkg. date bread mix or (15.4 oz.) nut bread mix
  • 2 c. chopped pecans
  • 2 c. raisins
  • 2 c. candied cherries (12 to 13 oz.)
  • 1 c. candied pineapple, cut up
  • corn syrup (if desired)

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour the sides and bottom of a tube pan.
  3. In a large bowl, combine water, oil, and eggs.
  4. Add the remaining ingredients (except syrup).
  5. Stir by hand until well combined.
  6. Pour the batter into the prepared pan.
  7. Bake for 75 to 85 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 30 minutes.
  9. Loosen and remove the cake from the pan.
  10. Cool completely on a wire rack.
  11. Wrap and refrigerate for up to 2 weeks or freeze for up to 3 months.
