Ingredients

  • 12 oz. fresh or dried fettuccine
  • boiling salted water
  • 6 Tbsp. butter or margarine
  • 1 c. sliced green onions
  • 2 cloves garlic
  • 1/2 pt. whipping cream
  • about 1 1/2 c. grated Parmesan cheese
  • salt
  • pepper

Instructions

  1. Cook fresh or dried fettuccine in a large kettle of boiling salted water until al dente, then drain.
  2. In a large skillet, melt butter over medium heat.
  3. Add sliced green onions and minced garlic; sauté until fragrant.
  4. Pour in whipping cream and bring to a gentle simmer.
  5. Stir in grated Parmesan cheese until melted and sauce is smooth.
  6. Season with salt, pepper, and ground nutmeg to taste.
  7. Toss the cooked noodles with the sauce until well coated and serve immediately.
