Creamy fettucine tossed with sautéed mushrooms, fresh vegetables, and a cheesy egg sauce, perfect for a quick, flavorful vegetarian meal for any pasta lover.

Ingredients

  • 1 cup sliced mushrooms
  • 1 clove garlic, minced
  • 4 teaspoons diet margarine
  • 1 cup cooked broccoli, zucchini or asparagus
  • 1/4 cup part-skim Ricotta cheese
  • 1 1/2 ounces grated Parmesan cheese
  • 2 cups cooked fettucine or noodles
  • 2 tablespoons chopped parsley
  • 1 egg

Instructions

  1. Sauté mushrooms and garlic in margarine.
  2. Stir in the cooked vegetables of your choice and set aside.
  3. In a blender, blend egg and Ricotta cheese. Add milk and Parmesan cheese, then blend well.
  4. Add the egg mixture to the vegetable mixture and simmer for 2 minutes.
  5. Toss with cooked fettucine and sprinkle with chopped parsley before serving.
