Ingredients

  • 1 medium onion
  • 3 slices bacon, diced
  • 1 small can mushrooms, drained
  • 1 can cream of mushroom soup
  • 1/4 cup Parmesan cheese
  • 1 cup bread crumbs
  • butter
  • 1 quart fiddleheads

Instructions

  1. Saute the diced bacon, chopped onion, and drained mushrooms together until the bacon is crispy and the onion is translucent.
  2. Boil the fiddleheads in water until tender, about 15 minutes, then drain.
  3. Mix the cooked bacon, onion, mushrooms, boiled fiddleheads, and the can of cream of mushroom soup together in a bowl.
  4. Transfer the mixture to a baking dish and top with 1/4 cup Parmesan cheese and 1 cup bread crumbs.
  5. Dot the top with butter.
  6. Bake in a preheated 350°F oven until the topping is golden brown, about 30 minutes.
