  • 2 eggs
  • 1 c. half and half
  • 1/2 lb. Jack cheese cubed
  • 1 c. grated Cheddar
  • sour cream

Instructions

  1. Saute chopped onion in butter until translucent.
  2. Add tomato sauce, chopped green chili pepper, and salt. Simmer for 5 minutes.
  3. Remove from heat.
  4. Beat eggs and half and half together and add to the sauce.
  5. Grease an 8 x 8 x 2-inch baking pan.
  6. Layer 4 tortillas on the bottom of the pan, then add half of the cubed Jack cheese and half of the sauce.
  7. Repeat the layers with remaining tortillas, cheese, and sauce.
  8. Cover the top with sour cream, grated Cheddar cheese, and paprika.
  9. Bake at 325°F (163°C) for 20 to 25 minutes.
  10. Let stand for 5 minutes before serving.
