Ingredients

  • 2 (20 oz.) cans black beans
  • 2 red bell peppers
  • 1 1/2 cups cooked corn kernels
  • 1 cup chopped red onion
  • 1 to 2 jalapeno peppers

Instructions

  1. In a large bowl, whisk together olive oil and lime juice; add chopped cilantro, ground cumin, salt, and ground pepper to taste, mixing well.
  2. Stir in rinsed and drained black beans, diced red bell peppers, cooked corn kernels, chopped red onion, and minced jalapeno peppers.
