Ingredients

  • 1 pkg. Hidden Valley Ranch powder dressing
  • 8 oz. sour cream
  • 1 box Jiffy cornbread mix
  • 3 chopped tomatoes
  • bacon bits
  • jalapeno peppers (optional)
  • 1 c. mayonnaise
  • 2 cans light red kidney beans, drained
  • 1 can corn, drained
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped scallions

Instructions

  1. Prepare the cornbread mix according to package directions and bake. Once cooled, cut into small cubes.
  2. In a large bowl, combine sour cream, mayonnaise, and the Ranch dressing mix; mix well.
  3. Add drained kidney beans, drained corn, chopped tomatoes, chopped green pepper, and chopped scallions to the dressing mixture.
  4. Gently fold in the cooked cornbread cubes and bacon bits.
  5. If desired, add sliced jalapeno peppers for extra heat.
  6. Chill the salad for at least 1 hour before serving to allow flavors to meld.
