Ingredients

  • 1 cup milk
  • 2 tablespoons active dry yeast
  • 2 eggs
  • 1 1/2 teaspoons salt
  • 2 cups gluten flour
  • 1/2 cup melted butter
  • 2/3 cup raw sugar
  • 1 teaspoon ground cardamom
  • 1/2 cup raisins
  • 2 1/3 cups unbleached white flour

Instructions

  1. Scald the milk, then cool until warm.
  2. Dissolve the yeast in the warm milk.
  3. Add beaten eggs to the mixture.
  4. Add salt and 1 cup of gluten flour, then beat well.
  5. Add melted butter and the remaining gluten flour, then beat well.
  6. Add sugar, ground cardamom, and raisins; knead 2 cups of unbleached white flour into the dough.
  7. Add more white flour if necessary to make the dough soft.
  8. Knead the dough for 20 minutes.
  9. Divide the dough into two equal parts and form two braids.
  10. Let the braids rise on floured cookie sheets for 1 1/2 hours until doubled in size.
  11. Glaze the risen braids with beaten eggs and sprinkle with raw sugar.
  12. Bake at 400°F (200°C) for 20 minutes until golden brown.
