Ingredients

  • 1 cup butter
  • 1/2 cup brown sugar, firmly packed
  • 1 cup canned pumpkin
  • 1 egg
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup chopped dates

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat butter and brown sugar together until fluffy.
  3. Add canned pumpkin, egg, and vanilla; mix well.
  4. Sift together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture and stir to combine.
  6. Stir in chopped walnuts and chopped dates.
  7. Drop spoonfuls of dough onto a greased or parchment-lined baking sheet.
  8. Bake for approximately 12 minutes or until golden brown.
  9. Remove from oven and cool on wire racks.
