Five-Vegetable Slaw
A crisp, colorful slaw combining shredded cabbage, bell peppers, cucumber, and scallions, dressed in a creamy vinaigrette—perfect for light lunches, picnics, or as a fresh side dish.
Ingredients
- 4 c. finely shredded green cabbage ⓘ
- 1/2 c. thinly sliced red bell pepper ⓘ
- 1/2 c. thinly sliced green bell pepper ⓘ
- 1/2 medium cucumber, peeled, halved lengthwise, seeded and thinly sliced
- 3 scallions, thinly sliced on the diagonal ⓘ
- 1/3 c. mayonnaise ⓘ
- 1 Tbsp. cider vinegar or red wine vinegar ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
Instructions
- In a large bowl, toss together the shredded cabbage, sliced red and green bell peppers, cucumber, and scallions.
- Mix in the mayonnaise, vinegar, salt, and pepper until well combined.
- Cover and refrigerate for up to 2 days before serving.
