Ingredients

  • 4 c. finely shredded green cabbage
  • 1/2 c. thinly sliced red bell pepper
  • 1/2 c. thinly sliced green bell pepper
  • 1/2 medium cucumber, peeled, halved lengthwise, seeded and thinly sliced
  • 3 scallions, thinly sliced on the diagonal
  • 1/3 c. mayonnaise
  • 1 Tbsp. cider vinegar or red wine vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a large bowl, toss together the shredded cabbage, sliced red and green bell peppers, cucumber, and scallions.
  2. Mix in the mayonnaise, vinegar, salt, and pepper until well combined.
  3. Cover and refrigerate for up to 2 days before serving.
