Florentine Lasagne

Ingredients

  • 8 oz lasagne noodles
  • 15 oz ricotta
  • 2 cups spinach
  • 2 eggs
  • 1 jar spaghetti sauce
  • 2 cans tomato paste
  • 1 lb shredded mozzarella
  • 1/2 lb mushrooms
  • 1 carrot
  • 2 shallots
  • 2 cloves garlic
  • 2 tbsp parmesan
  • 1 bunch fresh basil
  • salt & pepper

Instructions

  1. Preheat oven to 400F
  2. Cook and drain pasta according to instructions
  3. Cut spinach into thin strips
  4. Cut mushrooms into slices
  5. Chop shallots and basil
  6. Grate carrot
  7. Lightly beat eggs
  8. Combine ricotta, spinach, eggs, salt & pepper
  9. Saute garlic, shallots, mushrooms, carrot, basil
  10. Combine spaghetti sauce and tomato paste
  11. Spread spaghetti sauce mix at bottom of pan
  12. Layer with lasagna, 1/2 of ricotta, 1/2 of mushrooms, spaghetti sauce, and mozarella
  13. Repeat layers once
  14. Top with lasagne, spaghetti sauce, and mozarella
  15. Bake uncovered for 35-40 minutes
