Ingredients

  • 1 lb. bulk sausage
  • 1 c. chopped onions
  • 2 cloves garlic, chopped
  • 32 oz. spaghetti sauce
  • 1 (4 oz.) can sliced mushrooms
  • 2 Tbsp. grated Parmesan cheese
  • 1 (10 oz.) pkg. chopped frozen spinach, drained well
  • 16 oz. Ricotta cheese
  • 1 egg, beaten
  • 1/4 c. grated Parmesan or Romano cheese
  • 1/4 tsp. pepper
  • 1/2 tsp. seasoned salt
  • 1/2 (1 lb.) pkg. broad egg noodles
  • 2 c. shredded Mozzarella cheese

Instructions

  1. Cook sausage, onions, and garlic in a skillet until the sausage is browned and no longer pink.
  2. Add spaghetti sauce and sliced mushrooms; simmer for 30 minutes.
  3. Combine chopped frozen spinach, Ricotta cheese, beaten egg, grated Parmesan or Romano cheese, pepper, and seasoned salt in a bowl.
  4. Layer cooked broad egg noodles, sausage sauce mixture, and spinach mixture in a baking dish, repeating layers as desired.
  5. Top with shredded Mozzarella cheese.
  6. Bake in a preheated oven at 375°F (190°C) until cheese is bubbly and golden, about 20 minutes.
