Ingredients

  • 3 Tbsp vegetable oil
  • 4 New York strip steaks
  • 1/2 lb fresh sliced mushrooms
  • 2 shallots
  • 2 Tbsp butter
  • 1/4 cup cognac
  • 2/3 cup heavy cream
  • dash Tabasco sauce
  • couple drops lemon juice
  • salt and fresh ground pepper
  • 1 garlic clove
  • 2 Tbsp fresh chopped parsley

Instructions

  1. Preheat oven to 150°F to keep steaks warm while preparing the sauce.
  2. Heat half the vegetable oil in a large skillet.
  3. Add two steaks and cook over high heat for 5 minutes.
  4. Turn the steaks, season with salt and pepper, and cook for another 5 minutes for medium doneness.
  5. Remove steaks from skillet and keep warm in the oven.
  6. Repeat the process with the remaining oil and the other two steaks.
  7. Add shallots, garlic, parsley, butter, and mushrooms to the skillet.
  8. Season with salt and pepper and cook for 5 minutes over medium heat.
  9. Pour in cognac and cook for about 3 minutes over high heat.
  10. Add heavy cream and Tabasco sauce, then cook for another 5 minutes.
  11. Stir in lemon juice and serve the sauce over the steaks.
