Foiled Fish Dinners

A simple, flavorful foil-baked fish dinner featuring tender fish fillets topped with potatoes, onions, and fresh citrus, perfect for quick weeknight meals or outdoor grilling.

Ingredients

  • 6 fish steaks or fillets
  • dash of salt
  • dash of pepper
  • lime or lemon juice
  • 2 medium potatoes
  • 2 onions
  • butter or margarine

Instructions

  1. Place each fish steak or fillet on squares of heavy foil.
  2. Sprinkle the fish with salt, pepper, and lemon or lime juice.
  3. Layer several slices of cooked potatoes and sliced onions over each fish.
  4. Add more salt and pepper if desired.
  5. Top each with a pat of butter.
  6. Seal the foil pockets with a double fold.
  7. Grill over charcoal for about 20 minutes or bake in an oven at 400°F for 20 minutes.
