Ingredients

  • 1 qt. sliced raw potatoes
  • 3/4 c. uncooked rice
  • 2 lb. ground chuck
  • 2 large onions
  • 2 green peppers
  • 1 (1 lb.) can tomatoes
  • 2 1/4 tsp. salt
  • sprinkle of garlic
  • 1/4 tsp. pepper
  • Cheddar cheese

Instructions

  1. Spread sliced raw potatoes evenly on the bottom of a 9 x 13-inch pan.
  2. Sprinkle salt, pepper, and garlic over the potatoes.
  3. Sprinkle uncooked rice over the potatoes.
  4. Crumble ground chuck and fry in a skillet until browned.
  5. Spread the cooked ground meat over the potatoes and rice in the pan.
  6. Arrange sliced onions over the meat, then place sliced green peppers over the onions.
  7. Pour canned tomatoes over all the ingredients and add water up to the level of the rice.
  8. Lay pieces of cheddar cheese on top of the casserole.
  9. Bake at 400°F for 40 to 45 minutes.
  10. Reduce oven temperature to 350°F and bake for an additional 40 minutes.
  11. Let stand for 15 minutes before serving.
