Foiled Trout

A flavorful and delicate baked trout dish stuffed with sautéed vegetables, perfect for a wholesome, elegant meal suitable for family dinners or special occasions.

Ingredients

  • 2 carrots
  • 2 small white onions
  • 2 shallots or green onions
  • 2 celery stalks
  • butter or margarine
  • salt and pepper
  • 6 trout
  • cooking oil

Instructions

  1. Chop the carrots, white onions, shallots or green onions, and celery stalks finely.
  2. Sauté the chopped vegetables in 1/4 cup butter until tender.
  3. Add salt and pepper to taste.
  4. Split and clean the trout; stuff each with the sautéed vegetables.
  5. Dot the stuffed trout with butter and place 3 inches from the broiler.
  6. Broil for 4 minutes.
  7. Season with salt and pepper.
  8. Place each fish in foil and crimp the edges to seal.
  9. Oil the foil lightly.
  10. Place the foil-wrapped fish on buttered cookie sheets.
  11. Bake at 425°F for 15 to 18 minutes.
