Foiled Trout

- Chop the carrots, white onions, shallots or green onions, and celery stalks finely.
- Sauté the chopped vegetables in 1/4 cup butter until tender.
- Add salt and pepper to taste.
- Split and clean the trout; stuff each with the sautéed vegetables.
- Dot the stuffed trout with butter and place 3 inches from the broiler.
- Broil for 4 minutes.
- Season with salt and pepper.
- Place each fish in foil and crimp the edges to seal.
- Oil the foil lightly.
- Place the foil-wrapped fish on buttered cookie sheets.
- Bake at 425°F for 15 to 18 minutes.
