Ingredients

  • 1 envelope onion soup mix
  • 2 c. water
  • 3 to 4 lb. beef brisket
  • pepper
  • 1/4 c. catsup
  • 1/2 c. beer
  • 1/4 c. flour
  • 1 clove garlic

Instructions

  1. Mix onion soup mix with water in a roasting pan.
  2. Season the beef brisket with pepper and crushed garlic.
  3. Place the seasoned brisket in the pan and cover tightly.
  4. Cook at 325°F (160°C) for 2 to 2½ hours until the meat is just about tender.
  5. Remove the meat from the pan and set aside.
  6. Pour the gravy into a bowl, freeze until the fat hardens, then remove the fat from the gravy.
  7. Combine the gravy with ketchup, beer, and flour.
  8. Mix well until smooth.
  9. Slice the brisket and place it back in the roasting pan.
  10. Cover the meat with the gravy mixture.
  11. Bake at 325°F (160°C) for an additional 45 minutes to 1 hour until the meat is tender.
  12. Taste and adjust seasoning as needed.
