  • 2 1/2 lb. beef
  • 1/4 c. olive oil

  • 1 1/2 c. orange juice
  • 1 c. dry red wine
  • 3/4 c. tomato puree
  • 2 beef bouillon cubes
  • 1/4 tsp. nutmeg
  • 2 bay leaves

Instructions

  1. In a large kettle or heavy saucepot, sauté bacon until golden brown; remove and set aside.
  2. Combine flour, salt, and pepper; dredge the beef cubes in the flour mixture.
  3. Brown the meat in bacon fat over high heat, a few pieces at a time.
  4. Remove and reserve the browned meat.
  5. Add olive oil to the kettle; heat.
  6. Sauté chopped onions and garlic until golden.
  7. Add orange juice, red wine, tomato puree, beef bouillon cubes, salt, pepper, nutmeg, and bay leaves.
  8. Return the bacon and meat to the kettle.
  9. Cover and bring to a boil.
  10. Reduce heat and simmer for 30 minutes.
  11. Add chunks of turnips and cook until tender if desired.
