Four Meat Chili

Ingredients

  • 1 lb ground turkey
  • 1 lb bacon, chopped
  • 1 lb ground beef
  • 1 lb ground pork sausage (I use Jimmy Deans )
  • 2 (14 1/2 ounce) cans diced tomatoes (you can use chili ready tomatoes )
  • 1 (29 ounce) can tomato sauce (use puree if you want a thicker chili )
  • 1 (16 ounce) can black beans, undrained
  • 1 (15 ounce) can red kidney beans, undrained
  • 1 (16 ounce) can chili beans, undrained
  • 4 pieces fresh garlic, minced
  • 1 medium sized onion, chopped finely
  • 2 -3 tablespoons chili powder (adjust to taste )
  • 3 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 -2 1 -2 tablespoon mace (adjust for spiciness ) or 1 -2 tablespoon red pepper (adjust for spiciness )
  • 1 teaspoon black pepper
  • 1 whole jalapeno, sliced (optional)
  • shredded cheese
  • sour cream
  • cornbread

Instructions

  1. Fry each of the ground meats in a frying pan, separately. Drain the fats.
  2. Fry the chopped bacon partially, don't let them get crunchy because they will need to release some of their smoky flavors into the chili while it's cooking in the crock pot.
  3. Combine all the meats, beans, spices, onion, and tomatoes and sauce into a large crock pot and let it simmer on low for several hours, until the bacon is fully cooked. ( You can also use a chili pot and simmer on low for about 3-4 hours.)
  4. Add the sliced jalapeno on top of your chili for added spiciness, along with shredded cheese, sour cream and serve with cornbread or any crackers.
