Ingredients

  • 1/2 lb butter
  • 1 lb brown sugar
  • 8 eggs
  • 3 1/2 cups plain flour
  • 1 tsp baking powder
  • 2 lb pecan halves
  • 2 lb white raisins
  • 1/2 lb candied whole cherries
  • 1/2 lb candied pineapple
  • 2 oz lemon extract

Instructions

  1. Cream the butter and brown sugar well.
  2. Add eggs, one at a time, mixing after each addition.
  3. Sift about 1 cup of flour over the fruits and nuts, tossing to coat well.
  4. Add the remaining flour and baking powder to the creamed mixture and stir until combined.
  5. Stir in lemon extract.
  6. Add the fruit and nut mixture to the batter and fold in gently.
  7. Grease and line a deep tube pan and a 9 x 5 x 3-inch loaf pan with brown paper.
  8. Lightly grease the paper-lined pans.
  9. Spread the batter evenly into the prepared pans.
  10. Bake in a preheated oven at 325°F (160°C) for approximately 90 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow to cool in the pans for 15 minutes, then turn out onto a wire rack to cool completely.
