Ingredients

  • 1/2 cup finely cut salt pork or bacon
  • 1 onion, chopped fine
  • 4 cups potatoes, cut in cubes
  • 2 tablespoons butter
  • 4 tablespoons flour
  • 1 quart milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon thyme
  • 1 pint clams, cut in small pieces or 2 cans clam bits
  • 6 crackers

Instructions

  1. Place salt pork or bacon and chopped onion in a pan and cook until the onion is golden brown.
  2. Add 2 cups of water (including clam liquid) and the cubed potatoes. Simmer until the potatoes are tender.
  3. Melt butter in a separate saucepan; stir in flour, milk, salt, pepper, and thyme. Cook for 5 minutes, stirring constantly.
  4. Combine the milk mixture with the clam and potato mixture. Heat through, but do not boil.
  5. Add the chopped clams to the soup and heat until warmed.
  6. Break the crackers into small pieces and add to the chowder just before serving.
