Ingredients

  • 1 lb. cubed beef or lamb
  • 12 oz. pearl onions, whole
  • 4 large carrots, sliced
  • 6 oz. small mushrooms, sliced
  • 3 large celery stalks, chopped
  • 1/2 cup tomato juice
  • 1/2 cup water
  • 1/4 cup fine tapioca
  • 1 tbsp sugar
  • 2 tsp. salt
  • 2 bay leaves
  • 1 tsp. basil
  • 1/4 tsp. pepper

Instructions

  1. Place all ingredients in a clay oven stew pot.
  2. Bake at 300°F for 3 hours, stirring only 3 times.
  3. Alternatively, cook in a slow cooker for the day.
