Ingredients

  • 1 cup lentils
  • 3 cups rice (extra long)
  • 8 cups water
  • 2 teaspoons butter
  • 2 medium onions, sliced
  • 1 cup raisins
  • 2 1/2 pounds beef or lamb cubes
  • 6 tablespoons salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt

Instructions

  1. Boil lentils in enough salted water until tender, but not soft. Drain and set aside.
  2. Rinse the rice several times in warm water; soak in warm water and set aside.
  3. Bring a large pot of salty (2 tablespoons) water to a rapid boil.
  4. Drain the soaked rice; pour the rice into boiling water.
  5. Boil the rice for 8 to 10 minutes, stirring occasionally to prevent sticking.
  6. Drain the rice in a colander; rinse with cold tap water over the rice.
  7. In a large pot, melt butter and sauté sliced onions until golden.
  8. Add beef or lamb cubes, turmeric, and salt; cook until browned.
  9. Add raisins to the meat mixture and cook for a few more minutes.
  10. Layer the cooked meat and raisins at the bottom of the pot; add parboiled rice on top.
  11. Cover the pot and cook on low heat until the rice is fluffy and flavors meld, about 30-40 minutes.
