- Boil lentils in enough salted water until tender, but not soft. Drain and set aside.
- Rinse the rice several times in warm water; soak in warm water and set aside.
- Bring a large pot of salty (2 tablespoons) water to a rapid boil.
- Drain the soaked rice; pour the rice into boiling water.
- Boil the rice for 8 to 10 minutes, stirring occasionally to prevent sticking.
- Drain the rice in a colander; rinse with cold tap water over the rice.
- In a large pot, melt butter and sauté sliced onions until golden.
- Add beef or lamb cubes, turmeric, and salt; cook until browned.
- Add raisins to the meat mixture and cook for a few more minutes.
- Layer the cooked meat and raisins at the bottom of the pot; add parboiled rice on top.
- Cover the pot and cook on low heat until the rice is fluffy and flavors meld, about 30-40 minutes.
