  • 3 Tbsp. shortening
  • 3 Tbsp. all-purpose flour
  • 2 large onions
  • 3 lb. ground beef
  • 1/2 c. minced celery
  • 3/4 c. minced green pepper
  • 3 cloves garlic
  • 2 bay leaves
  • salt
  • 1 tsp. cayenne pepper
  • 1 tsp. pepper
  • 2 c. cooked rice

Instructions

  1. Melt shortening in a large skillet over medium heat.
  2. Add flour and cook, stirring constantly, until lightly browned.
  3. Add minced onions and sauté until transparent.
  4. Stir in minced celery, green pepper, garlic, bay leaves, salt, cayenne pepper, and pepper.
  5. Cook, stirring constantly, until ground beef is lightly browned.
  6. Add 2 cups of water and bring to a simmer.
  7. Reduce heat and simmer uncovered for 2 hours, adding additional water as needed to prevent sticking.
  8. Stir in cooked rice, chopped parsley, and shallots.
  9. Heat thoroughly before serving.
