Ingredients

  • 2 Tbsp. butter or margarine
  • 8 oz. pkg. medium noodles
  • 3 1/4 c. chicken broth
  • 1/4 tsp. garlic powder
  • salt and pepper to taste
  • 2 medium tomatoes, cubed in wedges
  • 2 medium zucchini, sliced
  • 1 c. sliced mushrooms
  • 1 1/3 c. shredded mozzarella cheese

Instructions

  1. In a large skillet, melt butter and lightly brown uncooked noodles, stirring frequently.
  2. Add chicken broth, garlic powder, salt, and pepper.
  3. Bring to a boil; add vegetables (tomatoes, zucchini, mushrooms).
  4. Cover and simmer for 15 minutes or until vegetables and noodles are tender.
  5. Pour into a serving bowl.
  6. Sprinkle individual servings with shredded mozzarella cheese.
