Ingredients

  • 2 beaten eggs
  • 2 c. cold cooked rice
  • 4 slices bacon, crisp cooked, drained and crumbled
  • 1/3 c. fine chopped green pepper
  • 1/4 c. grated Parmesan cheese
  • 2 Tbsp. fine chopped onion
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. cooking oil

Instructions

  1. In a bowl, combine eggs, rice, bacon, green pepper, cheese, onion, salt, and pepper.
  2. Cover and chill at least one hour.
  3. Using 1/3 cup of rice mixture for each, shape into patties about 3 1/2 inches in diameter.
