Ingredients

  • 1 cup leftover rice
  • 1 tablespoon oil
  • 1 onion
  • 1 green pepper
  • 1 stalk celery
  • 1 cup mushrooms
  • 1 small zucchini
  • 3 tablespoons tamari or soy sauce (optional)

Instructions

  1. Prepare the leftover rice for stir-frying.
  2. Chop the onion, green pepper, celery, mushrooms, and zucchini.
  3. Saute the onions in oil until translucent.
  4. Add remaining vegetables and cook for about 15 minutes, stirring frequently.
  5. Stir in tamari or soy sauce if using, and add chopped or whole peanuts.
