Ingredients

  • 3 Tbsp. olive oil
  • 1 1/2 cups cooked broccoli or leftover vegetables
  • 1/3 lb. mushrooms, sliced
  • 1 clove garlic, minced
  • 1/2 bell pepper, diced
  • 1/2 lb. leftover meat, cubed
  • 6 eggs, beaten
  • 1/2 tsp. pepper
  • salt to taste
  • 1 1/2 cups shredded cheese
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Heat olive oil in a large frying pan or Dutch oven.
  2. Add cooked broccoli or leftover vegetables, sliced mushrooms, minced garlic, and diced bell pepper.
  3. Stir, cover, and cook for 3 minutes.
  4. In a bowl, combine leftover meat, beaten eggs, salt, pepper, and shredded cheese.
  5. Stir the egg mixture into the vegetable mixture in the pan.
  6. Pour the mixture into a 3-quart casserole dish.
  7. Bake at 350°F (175°C) for 20 minutes.
  8. Sprinkle freshly grated Parmesan cheese on top and bake for an additional 5 minutes.
