- Heat olive oil in a large frying pan or Dutch oven.
- Add cooked broccoli or leftover vegetables, sliced mushrooms, minced garlic, and diced bell pepper.
- Stir, cover, and cook for 3 minutes.
- In a bowl, combine leftover meat, beaten eggs, salt, pepper, and shredded cheese.
- Stir the egg mixture into the vegetable mixture in the pan.
- Pour the mixture into a 3-quart casserole dish.
- Bake at 350°F (175°C) for 20 minutes.
- Sprinkle freshly grated Parmesan cheese on top and bake for an additional 5 minutes.
