Frittata(Easter Pie)

Ingredients
- 12 eggs ⓘ
- 1 cup diced cooked ham ⓘ
- 6 slices Genoa salami, cut into 1/2-inch squares ⓘ
- 1 cup sharp Provolone cheese, diced ⓘ
- 1 cup sliced pepperoni ⓘ
- 1/2 cup sliced black pitted olives ⓘ
- 1 cup Ricotta cheese
- 1/2 cup chopped parsley ⓘ
- 1/2 cup cooked and chopped mushrooms ⓘ
- 1/2 cup chopped green onion ⓘ
Instructions
- Lightly beat eggs in a bowl.
- Stir in diced cooked ham, salami, shredded Provolone, sliced pepperoni, sliced black olives, ricotta cheese, chopped parsley, chopped mushrooms, and chopped green onion.
- Prepare a large iron skillet by spraying with Pam or wiping with olive oil.
- Heat the pan and pour in the egg mixture.
- Cook slowly over moderate heat until the bottom half of the pie congeals.
- Remove the skillet to the broiler to cook the top half until light brown.
- Remove the pie from the broiler, transfer to a serving dish, and cut into wedges.
