Ingredients

  • 12 eggs
  • 1 cup diced cooked ham
  • 6 slices Genoa salami, cut into 1/2-inch squares
  • 1 cup sharp Provolone cheese, diced
  • 1 cup sliced pepperoni
  • 1/2 cup sliced black pitted olives
  • 1 cup Ricotta cheese
  • 1/2 cup chopped parsley
  • 1/2 cup cooked and chopped mushrooms
  • 1/2 cup chopped green onion

Instructions

  1. Lightly beat eggs in a bowl.
  2. Stir in diced cooked ham, salami, shredded Provolone, sliced pepperoni, sliced black olives, ricotta cheese, chopped parsley, chopped mushrooms, and chopped green onion.
  3. Prepare a large iron skillet by spraying with Pam or wiping with olive oil.
  4. Heat the pan and pour in the egg mixture.
  5. Cook slowly over moderate heat until the bottom half of the pie congeals.
  6. Remove the skillet to the broiler to cook the top half until light brown.
  7. Remove the pie from the broiler, transfer to a serving dish, and cut into wedges.
