Ingredients

  • 3 medium eggplants
  • 3 large onions, finely chopped
  • 2 lb ground lamb or beef
  • 1/2 cup dry red wine
  • 1/4 teaspoon cinnamon
  • 6 tablespoons flour
  • 4 eggs, beaten until frothy
  • 2 cups ricotta cheese
  • 1 cup freshly grated Parmesan cheese
  • 1 cup butter or margarine, divided
  • 3 tablespoons tomato paste
  • 1/2 cup chopped parsley
  • freshly ground pepper to taste
  • 1 quart milk
  • nutmeg to taste
  • 1 cup fine bread crumbs

Instructions

  1. Peel eggplants and slice them 1/2-inch thick.
  2. Brown eggplant slices quickly in 4 tablespoons butter or margarine and set aside.
  3. Heat 4 tablespoons butter or margarine in a skillet.
  4. Saute chopped onions until light brown.
  5. Add ground lamb or beef and cook for 10 minutes.
  6. Combine tomato paste with red wine, chopped parsley, cinnamon, salt, and pepper.
  7. Stir the mixture into the cooked meat and simmer, stirring frequently, until all liquid is absorbed.
  8. Remove from heat.
