Easy Mousaka
Mousaka is a hearty Greek casserole layered with tender eggplants, seasoned ground meat, and creamy cheese topping, perfect for family dinners and gatherings.
Ingredients
- 3 medium eggplants ⓘ
- 3 large onions, finely chopped
- 2 lb ground lamb or beef ⓘ
- 1/2 cup dry red wine ⓘ
- 1/4 teaspoon cinnamon ⓘ
- 6 tablespoons flour ⓘ
- 4 eggs, beaten until frothy ⓘ
- 2 cups ricotta cheese ⓘ
- 1 cup freshly grated Parmesan cheese ⓘ
- 1 cup butter or margarine, divided
- 3 tablespoons tomato paste ⓘ
- 1/2 cup chopped parsley ⓘ
- freshly ground pepper to taste ⓘ
- 1 quart milk ⓘ
- nutmeg to taste ⓘ
- 1 cup fine bread crumbs ⓘ
Instructions
- Peel eggplants and slice them 1/2-inch thick.
- Brown eggplant slices quickly in 4 tablespoons butter or margarine and set aside.
- Heat 4 tablespoons butter or margarine in a skillet.
- Saute chopped onions until light brown.
- Add ground lamb or beef and cook for 10 minutes.
- Combine tomato paste with red wine, chopped parsley, cinnamon, salt, and pepper.
- Stir the mixture into the cooked meat and simmer, stirring frequently, until all liquid is absorbed.
- Remove from heat.
