Ingredients

  • 1 cup shortening
  • 1 1/2 cups sugar
  • 3 eggs
  • 3 cups unsifted flour
  • 1 cup chopped nuts or toasted coconut (optional)
  • 1 teaspoon grated orange rind
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixer bowl, cream shortening and sugar until light and fluffy.
  3. Add eggs and beat until smooth.
  4. Gradually combine dry ingredients with the creamed mixture.
  5. Stir in mincemeat, nuts or toasted coconut (if using), and grated orange rind.
  6. Drop spoonfuls of dough 2 inches apart onto greased baking sheets.
  7. Bake for 10 to 12 minutes or until lightly browned.
  8. Allow cookies to cool before frosting and garnishing if desired.
