Ingredients

  • 1/4 cup honey
  • 2 tablespoons creamy peanut butter
  • 1/2 cup plain yogurt
  • 2 medium cantaloupes
  • 1.5 cups orange sections, halved
  • 1.5 cups apples, unpared and cubed
  • 1 (20.5 oz) can pineapple chunks, well drained
  • 1 large banana, sliced
  • 1/2 cup peanuts
  • shredded lettuce
  • maraschino cherries

Instructions

  1. Blend together honey and peanut butter.
  2. Gradually stir in yogurt.
  3. Mix until well blended; chill.
  4. Pare melons.
  5. Cut each melon into 3 crosswise slices with jagged edges.
  6. Remove seeds from melon slices.
  7. Chill the melon slices.
  8. Combine orange sections, apples, pineapple, banana, and peanuts in a large bowl.
  9. Toss gently with half the prepared dressing until fruit is coated.
  10. Place melon slices in the center of luncheon plates and surround with shredded lettuce.
  11. Fill the center of each melon slice with 1 cup of fruit mixture.
  12. Garnish with maraschino cherries.
  13. Serve with remaining honey-peanut butter mixture separately.
