Ingredients

  • 1/2 cup unsweetened orange juice
  • liquid sugar substitute (equal to 1 1/2 cups sugar)
  • 1 cup fresh finely chopped cranberries or water packed sour cherries, drained and finely chopped
  • 1 cup seedless raisins
  • 1 cup pecans, finely chopped
  • 1 cup unsweetened pineapple chunks, drained and chopped
  • 1 tablespoon grated orange rind
  • 3 tablespoons reduced calorie margarine, melted
  • 1 1/2 cups all-purpose flour, sifted
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Pour orange juice and liquid sugar substitute over chopped cranberries or cherries.
  2. Let stand for 1 hour.
  3. Add raisins, pecans, pineapple chunks, and orange rind to the cranberry mixture.
  4. Add melted reduced calorie margarine to the mixture.
  5. Sift and measure the all-purpose flour.
  6. Add baking soda, salt, allspice, cinnamon, and nutmeg to the flour and sift again.
  7. Add the dry ingredients to the fruit mixture.
  8. Stir until thoroughly mixed.
  9. Pour the mixture into 16 nonstick baking cups.
  10. Bake at 325°F (160°C) for 30 to 35 minutes until light brown.
