- 1 cup fresh finely chopped cranberries or water packed sour cherries, drained and finely chopped ⓘ
- 1 cup seedless raisins ⓘ
- 1 cup pecans, finely chopped ⓘ
- 1 cup unsweetened pineapple chunks, drained and chopped ⓘ
- 1 tablespoon grated orange rind ⓘ
- 3 tablespoons reduced calorie margarine, melted ⓘ
- 1 1/2 cups all-purpose flour, sifted ⓘ
- 1/2 teaspoon salt
- 1 teaspoon baking soda ⓘ
- 1/4 teaspoon allspice ⓘ
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg ⓘ
Instructions
- Pour orange juice and liquid sugar substitute over chopped cranberries or cherries.
- Let stand for 1 hour.
- Add raisins, pecans, pineapple chunks, and orange rind to the cranberry mixture.
- Add melted reduced calorie margarine to the mixture.
- Sift and measure the all-purpose flour.
- Add baking soda, salt, allspice, cinnamon, and nutmeg to the flour and sift again.
- Add the dry ingredients to the fruit mixture.
- Stir until thoroughly mixed.
- Pour the mixture into 16 nonstick baking cups.
- Bake at 325°F (160°C) for 30 to 35 minutes until light brown.
