Ingredients

  • 2 cups fruit cocktail
  • 1/4 cup shortening
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 cup sifted flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts
  • 2 tablespoons butter or margarine
  • 2 tablespoons white sugar

Instructions

  1. Cream shortening, brown sugar, egg, and vanilla until light and fluffy.
  2. Sift in the flour, baking powder, and salt, and mix well.
  3. Drain the fruit cocktail and fold it into the batter along with the chopped nuts.
  4. Pour the batter into a well-greased 8 x 8 x 2-inch pan.
  5. Combine melted butter and white sugar to make a caramel topping, then pour over the batter.
  6. Bake at 350°F for 45 minutes.
