Ingredients

  • 1/4 cup grapefruit juice
  • 2 teaspoons red vinegar
  • 1 teaspoon vegetable oil
  • 2 teaspoons honey
  • 1/2 teaspoon Dijon mustard
  • 1 pound boneless pork loin, sliced thin
  • 1 head leaf lettuce
  • 2 red grapefruit, peeled and sectioned
  • 1 1/2 cups seedless green grapes
  • 1 cup fresh strawberries

Instructions

  1. In a jar with a tight-fitting lid, shake the grapefruit juice, red vinegar, vegetable oil, honey, and Dijon mustard until well combined.
  2. Use a large nonstick skillet and spray with vegetable cooking spray.
  3. Heat the skillet to medium-hot.
  4. Stir the pork slices and cook for 3 to 4 minutes until done.
  5. Put leaf lettuce on individual plates.
  6. Top with cooked pork and fruit sections.
  7. Spoon the dressing over the salads and serve.
