Ingredients

  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1/4 cup oil
  • 1 egg
  • 1 (8 oz.) can crushed pineapple
  • 1 3/4 cups whole wheat flour
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup raisins
  • 1/2 cup chopped nuts
  • confectioners sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 13 x 9 x 2-inch pan.
  2. In a bowl, beat together honey, brown sugar, vanilla, oil, and egg until well blended.
  3. Fold in undrained crushed pineapple, whole wheat flour, 1/4 cup oats, raisins, and chopped nuts.
  4. Turn the mixture into the prepared pan, spreading evenly.
  5. Sprinkle the remaining oats over the top.
  6. Bake for 18 to 20 minutes or until the center is just firm.
  7. Remove from oven and let cool slightly.
  8. Sprinkle with confectioners sugar before serving.
