Funeral Pie is a nostalgic, sweet and tangy raisin-filled dessert with a flaky crust, perfect for family gatherings and traditional celebrations.

Ingredients

  • 1 c. seeded raisins, washed
  • 2 c. water
  • 1 1/2 c. sugar
  • 4 Tbsp. flour
  • 1 egg, beaten well
  • juice of 1 lemon
  • 2 tsp. grated lemon rind
  • pinch of salt

Instructions

  1. Soak raisins in water for 3 hours.
  2. Mix sugar, flour, and beaten egg in a bowl.
  3. Add seasonings, soaked raisins, water, lemon juice, and lemon rind to the mixture.
  4. Cook the mixture over hot water for 15 minutes, stirring occasionally.
  5. Allow the mixture to cool.
  6. Pour the cooled filling into a pie crust-lined pie pan.
  7. Cover the pie with narrow strips of dough, crisscrossed on top.
  8. Bake at 350°F until the crust is golden brown.
